Abstract
The name of “vanilla” is derived from the Castillian Spanish word “vanilla”, which means “little pod”. The vanilla beans are also called as pods or “black flower” as the mature bean, shrivels and turns black after it is picked.

Vanilla is a complex blend of flavor and fragrance ingredients extracted from the seed pods of the vanilla orchid, containing more than 250 compounds and multi-beneficial effects. Among the main constituents of vanilla are: tannins, polyphenols, free amino acids and resins among others.
Its antioxidant property is due to its main compound, Vanillin which is used to flavor foods and beverages and other confectionery and also being exploited in medicine.

Vanilla is the only orchid that produces an important commercial fruit for its flavor and its beneficial actives compounds. There are more than 110 species of vanilla, but the Vanilla planifolia, also known as Vanilla fragrance, is the most important.
